Yellow Catuai is a unique and vibrant coffee variety known for its striking yellow cherries and exceptional flavor profile. A hybrid of Mundo Novo and Caturra, this variety was developed in Brazil in the mid-20th century. The plant is highly productive, and its compact size allows for closer spacing, enabling nearly double the planting density compared to some other varieties.

In our Langbiang area, it’s grown on just one small farm, making it incredibly rare and produced in limited quantities. The combination of its rarity and the distinctive yellow cherries creates a truly special coffee experience, offering flavors and characteristics you won’t easily find elsewhere.

Anaerobic natural processing: unlocking Its full potential

To bring out the best in this extraordinary coffee, we’ve chosen to process it using the anaerobic natural method. This approach allows the Yellow Catuai to reveal its full potential and distinct qualities. After careful hand-selection, the yellow cherries are placed in sealed fermentation tanks, where they undergo a 120-hour fermentation in an oxygen-free environment. This slow, controlled process promotes the development of complex flavors as natural yeasts and bacteria interact with the cherries, enhancing their fruity and sweet characteristics while adding layers of depth and complexity.

The result: a cup like no other

Expect a cup bursting with fruity notes of grapes and apples, perfectly balanced by a smooth, honeyed sweetness and vibrant tartaric and malic acidity. The anaerobic natural processing method enhances the depth of these flavors, offering a refreshing and memorable experience that showcases the true potential of Yellow Catuai.
