Sticky beans
In some parts of the world, honey processing is also called "pulped natural" (mainly Brazil). Despite the name this processing method does not add actual honey to the coffee. It mostly refers to the stickiness of the beans and color during the drying process.
Color
Different producers have different names for their honey-processed coffees (black, red, yellow, white, semi-washed) a lot of the time based on the color of the parchment on the drying beds or the fermentation time. Black honey for us means that coffee cherries are carefully selected, washed, floated, and de-pulped.
Processing
After the pulping beans don't come into contact with water and 100% of the mucilage is kept on the parchment. With red, yellow, or white honey, some percent of mucilage will be removed resulting in a closer flavor profile to the washed coffees. When we keep all sticky mucilage on the beans, it is very important to pay attention to raking the coffee beans multiple times a day, to avoid any kind of uncontrolled fermentation and even drying process.
