Aqua natural: ready to explore
We're always pushing the boundaries to find new and innovative ways to process coffee. Aqua Natural is our latest discovery, where we combine traditional natural processing with a unique twist. By fermenting whole coffee cherries, with all their layers intact, in water, we’ve created a method that brings out the best in our beans.
Fermenting in water
Imagine ripe coffee cherries fully submerged in water tanks. This limits oxygen and keeps the temperature stable, allowing for even fermentation throughout the process. The water helps mix the cherries more easily, ensuring consistent fermentation and giving us greater control over the final flavor.
One week in the tank
The cherries spend 168 hours, or seven days, in the water, where natural yeasts and sugars interact at a slow, steady pace. This process enhances sweetness, adds juicy fruit notes, and improves complexity, all while preventing over-fermentation. A huge advantage is also its scalability for the future and the easy control of temperature and pH in the tanks.
The final cup
After a week of fermentation, the coffee emerges very clean and complex, with bright flavors of stone fruits and subtle floral hints. Aqua Natural highlights the unique characteristics of our coffee, bringing out the best flavors from our growing conditions for a truly memorable cup.
